Bang Bang Chicken Bowls

This bang bang chicken bowl is a simple, balanced meal that is a go-to nourishing lunch or dinner option! You’ve got protein from the chicken, fiber from the vegetables and rice, healthy fats from the avocado, and a light, creamy bang bang sauce to bring it all together. It’s satisfying, fresh and flavourful whilst supportive of steady energy to get you through the day.

Serves: 2 | Time: 20 minutes

Ingredients:

  • 300–350g chicken thigh, sliced
  • Salt + pepper
  • 1 tsp smoked paprika
  • 1 pack The Stock Merchant bone broth rice
  • 1 cucumber, sliced
  • 1 carrot, grated or julienned
  • 1 cup purple cabbage, finely shredded
  • 1 avocado, sliced
  • Fresh coriander, to serve
  • 2 tbsp Greek yoghurt
  • 1 tbsp mayo
  • 1–2 tsp Mingle sweet chilli (to taste)
  • 1 tsp sriracha (more if you like heat)
  • 1 tsp honey
  • 1 tsp rice vinegar
  • Sesame seeds
  • Extra coriander

Method:

  1. Dice the chicken and season with smoked paprika, salt and pepper.
  2. Heat oil in a pan over medium-high heat and cook chicken for 6–8 minutes until golden and cooked through. Set aside to rest.
  3. Mix all bang bang sauce ingredients together in a small bowl until smooth. Taste and adjust heat or sweetness if needed.
  4. Prepare the salad ingredients and set aside.
  5. Cook the bone broth rice according to packet instructions and set aside.
  6. Divide rice between bowls then top with cabbage, carrot, cucumber, avocado and chicken.
  7. Drizzle generously with bang bang sauce.
  8. Sprinkle with sesame seeds and fresh coriander to finish!
