Matcha Chia Pudding

This matcha chia pudding is a perfect breakfast, rich in fibre, omega-3s & antioxidants from the combination of chia seeds & a high-quality matcha. The coconut cream & almond milk make it super creamy while the honey lightly sweetens it.
You can keep it simple or add coconut or greek yoghurt, blueberries, or banana for extra protein, probiotics & natural sweetness. It’s a nourishing, make-ahead option that supports balanced blood sugars and a relaxed, focused start to your day!
Serves: 2 (large) | Time: 5 mins + setting

Ingredients:
- ½ cup chia seeds
- 2 tsp Nya matcha powder
- ¼ cup coconut cream
- 1 tsp honey
- 1 cup almond milk
- Yoghurt, to top
- Blueberries, to top
- Banana, to top

Method:
- In a small bowl, whisk matcha and honey together with a little bit of hot water (not boiling) until dissolved.
- Add chia seeds, coconut cream, almond milk and honey and whisk until combined. It should begin to thicken now.
- Pour into prepared jars and set in the fridge. This may take 30 minutes otherwise you can leave in the fridge for up to 3 days in an airtight container.
- Once ready to serve, top with yoghurt, blueberries and banana.
