Loaded Tuna Rice Cakes

 

 

These loaded tuna rice cakes are the perfect mix of simple and nourishing. High-quality tuna from East Coast Tuna Co. brings in lean protein and brain-loving omega-3s, while the cottage cheese and avocado adds beautiful protein and healthy fats to keep you fuller for longer. A handful of fresh microgreens on top gives a pop of crunch and extra nutrients. These are quick to throw together and they make an easy snack or light meal that feels fresh, balanced, and delicious!

Ingredients:

  • 2-4 rice cakes
  • 1 tin of East Coast tuna
  • 2 tbsp high-quality mayo
  • 2 tbsp cottage cheese
  • 1 tbsp capers
  • 1/2 avocado, sliced
  • 1 handful of Micro greenies
  • Salt and pepper, to taste
  • Lemon

 

Method:

  1. In a small bowl, combine tuna, mayonnaise, capers, salt and pepper and stir until combined.
  2. Lay out rice cakes and evenly add cottage cheese, tuna mixture, avocado and microgreenies.
  3. Squeeze lemon over the top and enjoy immediately!
