Loaded Tuna Rice Cakes

These loaded tuna rice cakes are the perfect mix of simple and nourishing. High-quality tuna from East Coast Tuna Co. brings in lean protein and brain-loving omega-3s, while the cottage cheese and avocado adds beautiful protein and healthy fats to keep you fuller for longer. A handful of fresh microgreens on top gives a pop of crunch and extra nutrients. These are quick to throw together and they make an easy snack or light meal that feels fresh, balanced, and delicious!

Ingredients:
- 2-4 rice cakes
- 1 tin of East Coast tuna
- 2 tbsp high-quality mayo
- 2 tbsp cottage cheese
- 1 tbsp capers
- 1/2 avocado, sliced
- 1 handful of Micro greenies
- Salt and pepper, to taste
- Lemon
Method:
- In a small bowl, combine tuna, mayonnaise, capers, salt and pepper and stir until combined.
- Lay out rice cakes and evenly add cottage cheese, tuna mixture, avocado and microgreenies.
- Squeeze lemon over the top and enjoy immediately!
