Gut Nourishing Potato Salad

Our roast potato salad is simple, fresh, and full of gut-loving benefits! We’ve left the skin of the potatoes on in this recipe to keep all those wonderful nutrients in and then cooked and cooled the potatoes to act as a resistance starch to support a healthy gut microbiome.
Paired with fresh rocket, crunchy radishes, and crispy prosciutto and topped with Gevity’s gut-friendly mayo- this salad is creamy, nourishing, wholesome and perfect to make ahead of time!
Serves: 4-5 Time: 5 minutes (with prepped ingredients)

Ingredients:
- 5 medium potatoes, cubed, roasted and cooled
- 1/2 cup mixed fresh herbs (dill, chives, parsley)
- 100g prosciutto, cooked and crispy
- 60g rocket, fresh
- 3 radishes, thinly sliced
- ½ cup Gevity Great Guts Mayo
- ½ lemon, juice
- 1 tsp white wine vinegar
- Salt and pepper
Method:
- In a large bowl, add cooked and cooled potatoes.
- Gently toss through fresh herbs, rocket, radishes and crispy prosciutto.
- In a small bowl, combine Gevity mayo, lemon, vinegar and season with salt and pepper.
- Pour dressing over the salad and toss. Serve immediately!
