Brownie Cookies

Treat Dad This Father’s Day! These rich, fudgy brownie cookies are the perfect way to show Dad some love. Made with indulgent dark chocolate and a soft, crackly top, they’re the ultimate sweet treat to enjoy together. Pair with his favourite cuppa for a simple but special celebration.
Makes: 12 cookies Time: 30 minutes
Ingredients:
- 180g Flannerys bulk dark chocolate
- 50g butter
- 3/4 cup sugar
- 2 eggs, room temperature
- 3 tbsp Flannerys cacao powder
- 3 tbsp corn starch
- 1/4 tsp baking powder
- 1/2 cup Sweet William dark chocolate chips
- 1 tsp vanilla
- Salt flakes

Method:
- Preheat oven to 180’C. Line two trays with baking paper.
- Melt dark chocolate and butter together until smooth. Let cool slightly.
- Meanwhile, in a stand mixer, whisk together eggs and sugar until tripled in size, light and fluffy. This is about 4-6 minutes on high speed. Pour chocolate in and whisk to combine.
- Sift in cocoa powder, corn starch, baking powder and salt and gently fold through. Add chocolate chips and combine.
- Chill the mixture in the fridge for 10 minutes. You want the chocolate to solidify just enough so it is no longer runny but not rock hard. Using a cookie scoop, scoop batter onto trays, about 4cm apart. Slightly press down to flatten.
- Bake for 8-9 minutes or until cooked on the outside, puffed up in the centre and cracked on top for a fudgy cookie. Remove from oven and allow to cool completely.
