Potato Kimchi Waffles with Gut-Lovin’ Mayo Drizzle

Crispy edges, spicy tang & a creamy drizzle… this one’s for the savoury brunch lovers. Packed with probiotics & finished with a good gut mayo, these waffles are crunchy, comforting & nourishing all at once.⁠

kimchi waffles

Ingredients:
  •  2 medium potatoes (e.g., Sebago or Russet), peeled & grated⁠
  • 1/2 cup Kehoe’s Kimchi, finely chopped + extra to serve
  •  2 eggs⁠
  • 1 tbsp rice flour or plain flour (GF if needed)
  • 1 tbsp tamari (or soy sauce)
  • 1/2 tsp garlic powder⁠
  • 1 spring onion, finely sliced⁠
  • Salt & pepper to taste⁠
  • Olive oil spray (for waffle iron or pan)⁠

 

⁠To Serve:⁠

  • Gevity Great Guts Mayo
  • Fresh herbs (coriander or chives)⁠
  • Extra kimchi⁠
  • To serve: fried egg &/or avocado on top⁠

 

Method:
  1. Prepare the potato mix:⁠
    Grate potatoes & squeeze out excess moisture using a clean tea towel. In a mixing bowl, combine potato, chopped kimchi, eggs, flour, tamari, garlic powder, spring onion, salt & pepper. Mix well.⁠
  2. Cook the waffles:⁠
    Preheat waffle iron & lightly oil. Spoon mixture in & cook for 4–6 minutes, until crispy & golden. (You can also cook as fritters in a non-stick pan if no waffle iron is available).⁠
  3. Plate it up:⁠
    Serve hot, drizzled generously with Gevity Great Guts Mayo. Top with more kimchi, herbs & optional extras like a fried egg or sliced avocado.⁠
