Ingredients:

• 8 Big Boys Jumbo Organic Eggs
• Splash of milk (of choice)
• 1tbsp Nutra Organics Veggie Hero
• 100g Bangalow Ham – diced
• Handful cherry tomatoes – cut in half
• 1/2 capsicum – diced
• 6 mushrooms – sliced
• 1/2 cup Mungalli Feta

Method:

1. Preheat oven to 190°C.
2. Combine eggs, milk, Veggie Hero & salt & pepper in a bowl. Pour into a jug then into muffin tray.
3. Add chopped vegetables, ham & feta to each muffin.
4. Place tray in oven for 25/30 mins or until golden and egg is cooked through.
5. Allow to cool then transfer from muffin tray.
